Homemade Pasta Carbonara for Two

Description
A simple and quick pasta recipe. This dish comes from Rome.
Ingredients

- 200g spaghetti
- 150g bacon
- 1 tsp olive oil
- 2 large eggs
- 100g grated Pecorino Romano cheese
- 2 clove garlic, peeled and chopped (optional)
- Salt and black pepper, to taste
Instructions
- Combine egg and Pecorino Romano cheese in a separate bowl.
- Boil spaghetti according to package. Save around 1 dl of pasta water. Then drain the pasta.
- In a pan add olive oil and cook the bacon and garlic for around 5 min on medium heat.
- Turn down off heat on pan and then add pasta to bacon pan.
- Add egg and cheese sauce to the same pan and stir around.
- If pasta is too thick then add some of the pasta water until the sauce gets a good consistency.
- Add salt and pepper to taste.
- Done.
